Along with the Moscow Mule, which subs vodka for rum, this is one of the great spicy numbers using that underrated Caribbean staple—ginger beer—to give it its Bermudan kick. And no, it’s never acceptable to substitute ginger ale, which will make the drink, and by extension you, something of a weakling. Good ginger beer is a solid drink on its own, but like almost everything else it’s even better with a bit of booze. The islanders among us would say forget the lime, but to do so would take away the drink’s colour and nourishment.

2 oz dark rum
(like Gosling’s Black Seal or Pussers)
3.5 oz ginger beer
Juice of half a lime

Mix in Collins glass with plenty of ice.
