Restaurant
Bishop’s
October 8, 2009
Many of B.C.’s most formidable talents have toiled at this venerable Kitsilano eatery over the past 25 years, with several moving on to change the way we dine (Jeff Van Geest, Vikram Vij, Rob Feenie, Michael Allemeier, to name just a few). Owner John Bishop added another recently to this crowded pantheon, Andrea Carlson, former chef de cuisine at the West End’s Raincity Grill . Her regional sourcing and simply expressed cooking doveail seamlessly with the restaurant that started Vancouver’s love affair with local ingredients. The room is as unassumingly elegant as Bishop himself, with work from local artists adorning the walls. Service, the province of omnipresent Abel Jacinto, never misses a beat, while the wine list is full of hard to find local labels. The menu changes often to reflect what’s in season—we recently enjoyed a seared Sturgeon filet with morels, fava beans, caramelized gnocchi, and candied bacon drizzled with hazelnut butter.
