This stellar Yaletown outpost is a favourite of culinary experts, visiting celebs, and just plain lovers of Italian food. Owner-chef Pino Posteraro is a legendary micromanager, always scolding, tasting, glad-handing. But it’s his cooking that makes the place sing. His inventive touch with pasta dishes is especially evident—try the garganelli with wild boar sausage ragout or the linguine with lobster in a chili-heated tomato-cream-lobster sauce. The open kitchen and dining area make the room feel spacious yet intimate, the wine list is long and carefully put together, and the service is excellent. But it’s Posteraro’s inventive use of local ingredients to explore and extend his culinary heritage that makes this one of the finest rooms in town.
