Restaurant
DB Bistro Moderne
October 9, 2009
Executive chef Stephane Istel turns out dishes of exceptional merit in this high-octane, 65-seat bistro, which works equally well at lunch and dinner. Manhattan icon Daniel Boulud, who joined forces with local partners David and Manjy Sidoo, makes regular visits, fine-tuning the menu and the service. His meticulous touch, and his influence on Istel, is everywhere evident. The signature DB Burger—a baseball-sized offering of ground sirloin, boned short rib, foie gras, and black truffle—is a satisfying test of manhood, and the pheasant tortellini (with crispy pork belly, quail egg, and mushrooms) is a beautiful amalgam, not overly rich or gamy, of French and Italian cooking. The vibe, the beautiful people, and the food make this one of the city’s most appealing rooms.
