Healthy, warming, family-friendly hot pot cooking—diners poach ingredients in simmering broth—is incredibly popular throughout China. Choose the split pot, which allows you to sample both a hot and spicy broth and the simplicity of a clear stock. The well-marbled beef is an excellent starting point, with only a quick dip needed for perfect medium rare tenderness. The house-made seafood and meat dumplings are exemplary. Lobster, spot prawns, and thinly sliced fresh fish all emerge from the soup ringing with sweet freshness. A few fistfuls of napa cabbage or watercress and a bowl of noodles round out the meal.
