Hotly anticipated Gastown watering hole from first-time owner/bartender Jay Jones celebrates the simple pleasures of food and drink. Located just east of the steam clock, this heritage space (formerly Flux Bistro) retains a turn-of-the-century charm. Deep booths sink into crushed velvet wallpaper while marbled pillars, ribbon mahogany, and white linen softens the exposed brick and cedar beam interior. Not surprisingly, the 22-seat custom bar is the room’s show stopping centerpiece. Fashioned from 120-year-old Douglas fir and lit by Edison bulbs from antique chandeliers, the bar boasts three fully stocked wells that allow for maximum guest interaction without slowing down cocktail production. Chef/co-owner Chris Irving’s back-to-basics menu features hearty fare like grilled cheese and roasted tomato soup ($10), Sloppy Joes with Pemberton beef and Sloping Hills pork ($12), and foil-wrapped campfire trout ($16). Be sure to get there early—those coveted bar seats are first come, first served.
