Instead of suffering through last year’s economic downturn, partners Tom Doughty and 2009 Vancouver magazine Chef of the Year Rob Belcham got creative. The result is a casual reincarnation of their critically acclaimed fine-dining boîte Fuel, and a much better restaurant. Stripped down and laid-back, the industry-leading interpretations of locally sourced ingredients and strong service remain. Neighbourhood signatures include the Cure (Belcham’s housemade salumi), buttermilk-fried chicken with buckwheat waffle and watermelon ($18), and a hulking dry-aged beef burger with house-cured bacon ($15.50). The dozen barstools facing the open kitchen are some of the best seats in town, and epic desserts from pâtissier Paul Croteau make for a very happy ending. The three-course prix fixe ($38) is a steal.
