A stunning little wine bar that exudes modern cool recently opened on the main floor of the boutique-ish Moda Hotel. Conceived and expertly run by former Lumière star sommelier Sebastien Le Goff, it leans on hard-to-find cured meats, cheeses, and wines. Little nooks and white leather banquettes ring the periphery, but the thin space is dominated by a long bar. Behind it works a crew of well-trained and fastidiously groomed barkeeps who are quick to chat and pour (check out their wine “tap” machine, dispensing tots of air-controlled reds and whites—a Vancouver first).
