Winner of the Best New Informal nod at our 2008 Restaurant Awards, this service-oriented room co-owned by all-stars Mark Brand and Neil Ingram and wunderkind chef Jeremie Bastien provided much of what Gastown was missing as it continued its march toward gentricification: sophistication, expertise, and a healthy dose of élan. It’s a high ceilinged, open-concept room, largely constructed with reclaimed and recycled materials (including the gilt-framed mirrors hanging from the ceiling, rescued from the Sutton Place Hotel). The local ingredient-driven and French backboned menu changes often, but pounce whenever you see spot prawns in season (May and June) or any sort of wintry braise. Bastien does a braised AAA beef short rib with chanterelles in red wine jus over fresh pappardelle noodles that can make time stand still. The bar is ground zero for the city’s cocktail culture, so be adventurous.
