This sexy trat in the revamped Moda Hotel is mercifully not in the “O Sole Mio,” checked tablecloth vein. Witness the large colourful canvases, mirrored walls, exposed original beams, and candy-striped chairs where Vancouver’s young and stylish perch. English chef Neil Taylor (formerly of London’s tony River Café) has floored every food critic in town with honest, focused, and sparing regional Italian cooking. Must-haves include raviolis of sweet local corn and ricotta saddled with shavings of pecorino (all pastas are made in house); wild Coho flavoured with fennel; and new potatoes roasted in duck fat with rosemary and garlic. Lauded sommelier Sebastien Le Goff runs the room and service is accordingly expert.
