Much like the Adara hotel (whose guests count themselves regulars here), the Mountain Club took Whistler’s classic (if somewhat Disney-fied) chalet look and gave it a modern flip: white leather banquets against rustic references like antler chandeliers and “planted” birch logs. The food is modern too—divided into “earth” and “ocean” categories and prettily plated, though the chef hasn’t abandoned ski-country comfort food (don’t leave without a side of the ultra-rich mac and cheese). Start with a generous portion of herb-crusted venison carpaccio ($16), and move on to Fraser Valley chicken, with prosciutto, artichokes, and potato purée ($28). Word has it that Thomas Haas liked the food so much, he asked to have his desserts served here. Finish with one of his sour cherry and pistachio tarts ($9), and work it off on the mountain the next day. Speaking of, this is also an excellent spot for aprés.
