A Montague double infrared radiant broiler is the secret weapon in the kitchen arsenal at Pinkys, where the Browns Social House group are out to prove they’re serious about steak. Their beef is a superior Alberta-raised brand, AAA Sterling Silver, grain-and corn-fattened. In the dining room the music is loud, and pink ponyskin barstools set the scene. Pinkys is the steakhouse reinvented, an old-new balance of traditional scalloped potatoes ($7) and “wicked” mushrooms made with spicy pepper sauce ($7); of 16-ounce bone-in rib eyes ($34) and female-friendly seven-ounce sirloins ($18).
