“Vikram Vij [Vij’s, Gold] is an alchemist who has conjured the perfect formula for success.” Our judges noted fluid service that hits all the right notes, and “my god, the food: grilled pork tenderloin with baby back ribs in a fennel-seed coconut curry with roasted cashews; duck breast with spicy mango and sautéed yellow and green zucchini—revelatory.”

Maurya (Silver) is a “very pretty room that hosts very serious Indian dining—the lamb rogan josh (leave the butter chicken to the tourists) is tender and flavourful, as are angoori prawns tossed with fenugreek and cilantro.”

At Vij’s kid-sister room, Rangoli (Bronze), pared-down dishes like black chickpea and onion cakes in spicy coconut curry make for a light lunch or a fabulous prefab dinner.

Stalwart Ashiana Tandoori and southern-style star Chutney Villa both earn Honourable Mention.
