 The expertly prepared cocktails, at-ease multicultural staff, and perfect wok technique at Bao Bei Chinese Brasserie (Gold) all reflect the best of modern Chinese dining in Vancouver. Using sustainable and organic ingredients seems like a no-brainer, but no other Chinese restaurant of note does this so consistently. The savoury lamb shao bing, crispy pork belly, and house-made dumplings all come highly recommended. Ningtu (Silver) is the unsung hero of the incredibly competitive Casual Chinese restaurant world, turning out family-style classics such as warming soups with stuffed tofu and napa cabbage, and a superb Peking duck, in the same location for many, many years. Dinesty Dumpling House (Bronze) has brought a jolt of uncompromising Taiwanese-style flavours to Robson Street, attracting a steady lineup looking for delicate steamed soup dumplings, lip-numbing kung pao chicken, and hearty rice noodles tossed with all manner of tasty things. Honourable Mentions: Hoi Tong Seafoood, Silkway Halal
