Dining trends come and go, but the classical dishes plated year after year by chef Michel Jacob and his team at Le Crocodile (Gold) never seem to lose the devotion of even the most fickle diners. (One judge unreservedly states that he runs “the best French kitchen ever!”) Warhorses such as lobster bisque, frogs’ legs, and Dover sole in butter sauce transcend their familiarity, while the $85 chef’s tasting menu is arguably the most reasonably priced splurge in the city. Likewise, Bacchus at the Wedgewood (Silver) continues to fly the flag for old-school indulgences (rack of lamb, truffle frites, foie gras torchon) in one of too few rooms that still value the appeal of deep leather chairs and a martini poured tableside. La Régalade (Bronze) makes up for what it lacks in size (make a reservation if you plan to pilgrimage across the bridge) with a resolutely time-honoured list of attractions: escargots, house-made pâté, boeuf bourguignon—and, of course, a cheese plate or chocolate tart to follow.
