EAT! Vancouver, one of the city’s most anticipated culinary events of the year, returns November 6 to 11 to bring exclusive culinary events to the city. Hit up the Pinnacle Vancouver Harbourfront Hotel to sample plates from 18 of Canada’s top chefs at the Harvest event November 10, or to satisfy your sweet tooth at EAT! Pastry, which will feature pastry chefs and chocolatiers like Beaucoup Bakery‘s Betty Hung, 49th Parallel Coffee Roasters and Gastown’s Cadeaux Bakery. But beyond these tasting events, foodies will have the opportunity to attend some very special collaborative dinners.Lucais Syme, owner of modern European bistro Cinara (also Vancouver Magazine’s Best Downtown Restaurant” for two consecutive years), hosts Nick Nutting from Tofino’s Wolf in the Fog on November 8 for a dinner for 50 people. This will be the second time Syme and Nutting are collaborating, although their tastes at a glance appear remarkably different—Syme personally loves to showcase the flavours of Italy, while Nutting plates dishes inspired by the rugged and fearless landscape on Vancouver Island’s western shore. But this odd couple has proven they can create something wonderful together: at EAT! Vancouver 2015, the duo teamed up to create a seafood dish using fish that Nutting had caught himself that very morning. “It was amazing because he had some other friends bring in some stuff they’d caught, too, and then had them take a plane over to deliver those ingredients,” says Syme, which he joked may have raised a few worried eyebrows over at Vancouver Coastal Health. But they had a blast along the way and learned where their individual tastes overlapped.For their collaborative dinner series this year, they’ll be a little more prepared, although still haven’t decided what they plan to serve just yet. “This time we’ll do better, we’ll be more organized,” he laughs.
