Three Vancouver restaurants host three of Mexico’s top chefs.
It may be rainy and grey outside, but these dishes will be sure to spice up your day. Sabores CDMX’s event, Flavours of Mexico City, is coming to Vancouver for the first time from December 8 to 10 and it’s got us dreaming of sunny skies and bold south-of-the-border eats.And while it may not be the same as going to Cabo, three top chefs from Mexico City will take up residence in Vancouver’s Burdock and Co., Cacao and Homer Street Café and Bar. Each chef will prepare a set menu of upscale Mexican cuisine featuring traditional regional dishes with a modern twist. Think three different kinds of tacos (including stewed beef tongue!) and pork tamale with a crushed chilli pepper sauce.If your mouth isn’t watering yet, check out what’s on the menu below:Chef Mario Espinosa will be at chef Andrea Carlson’s Burdock and Co. serving a grilled beats and potatoes dish with traditional sikil pak (a dip made with roasted vegetables and toasted pumpkin seeds) and aged cheese, short ribs in a charred-chile blend, and a sweet potato purée with star anise, peanuts and cinnamon ice cream.Chef Gerardo Vázquez Lugo will be cooking three dishes with Cacao’s chef Jefferson Alvarez. On the menu is a prawn clemole soup, followed by duck confit with mancha manteles mole, apple, pear and pineapple, and chocolate tamale for dessert.Chef José Manuel Baños will share chef Tret Jordan’s kitchen at Homer Street Café and Bar. They will be serving four dishes, starting with the Oaxaca entrée trilogy, which includes fried garnacha (a type of fried tortilla traditionally topped with meat and cheese. In this case the beef will be seasoned with spices and chilies, and served with pickled cabbage and cheese), pescadilla (it’s like a fish quesadilla) with salad and pressed fresh cheese, and pork tamale with adobo costeño sauce. This will be followed by a frijolón soup (bean soup with fried tortilla and cheese), a trilogy of tacos (chicken, pork and stewed beef tongue), and a pumpkin candy dessert with Mexican cane sugar and cinnamon.For reservations and menu prices visit saborescdmx.com.
