Smoked Black Cod and Apple Chowder


1 litre whole milk
2 cups apple juice
2 cups Farmhand Ale, Drfitwood Brewery
2 cups diced black cod
2 cups diced Yukon gold potatoes
2 cloves garlic, minced
1 cup diced white onions
1 cup diced fennel
1 cup corn kernals
¼ cup flour

Start by sautéing the onions and fennel in the butter. 5 minutes.
Add the garlic. 1 minute.
Add the flour, stir and incorporate.
Add the apple juice and beer.
Add the milk.
Add the potatoes and cook over medium heat for 20 minutes.
Add the diced black cod. Cook for 5 minutes.

Garnish: Stir in –
1 cup diced granny smith apples
Chopped chives
Dehydrated apples-on the side
