Service can be a little slapdash and the dough occasionally too charred, but who cares? A night in the happening all-ages room is an instant teleport to warmer climes. Nicli Antica Pizzeria (Silver) delivers pleasing pies in a contemporary Gastown space. Go for light, airy dough with a flame-blistered cornicione and a properly thin centre so soft it almost melts under a small ladling of bright, bold, hand-crushed sauce. At Pizzeria Farina (Bronze), J.C. Poirier teases an excellent, golden, lightly blistered crust (made from high-gluten Canadian bread flour fermented for three days) out of a stone-shelved gas oven. It’s not an easy trick, almost as impressive as getting a licence this year for wine in both colours!
