To say Jinya Ramen takes ramen seriously is an understatement. The chain was inspired by founder Tomonori Takahashi’s first visit to North America when he struggled to find a satisfying bowl of his favourite Japanese food. The son of a successful restaurateur, Tomonori decided to make his own ramen bar in order to be enjoy the traditional taste and flavour he appreciated back home.Following his father’s business model for delicious, reasonably priced and accessible food, Tomonori opened his first Jinya location in Tokyo in 2000, naming the restaurant after a respected Samurai soldier from the community. He then took Jinya Ramen Bar with him to California, establishing a successful franchise operation that never sacrifices quality of food.At Jinya, in true Japanese tradition, the real emphasis is on the broth. Jinya’s ramen broths simmer for more than ten hours until the taste is unforgettable. Meanwhile all noodles are made in-house, guaranteeing ultimate flavour and texture, and a variety of toppings and tapas complete the menu, which changes slightly by location.
